I've been going for simple more lately, my daughter doesn't eat her entire lunch.  So I have tried to make it more simple so she can have time to eat and play.

What's in our Lunch Box?

Salad day!  We eat salads weekly as side and main dishes, we have 1 day that is just a salad day... but LOADED with goodies.  Similar to a cobb or chef salad.  It starts with kale, spinach, and romaine lettuce, then I let my kids add their own veggies to their salad; we add eggs, meats, cheese... etc.

I happened to have a salad yesterday and she wanted one for today.

Snack Lunch!  My daughter is so funny, she loves veggies and fruits (atta girl!) and wants more "snack" lunches.  I love this about my kids, (besides my little picky eater, we struggle with him) they love eating raw {and cooked} veggies and fruits.

I rarely buy rolls.  Why buy them when I can make amazing ones at home!  I just need to get a wheat grinder and I will making my own bread too!

Bottle of Water, Homemade Roll with Flax Seed, Wheat Germ, and Chia Seeds, Danimals Yogurt Drink (we are HUGE yogurt people, mostly greek but my kids love these too.) Cut Broccoli, Cut Carrots, a Prune, and Trader Joe's Chocolate covered Sunflower Seeds.

We had rice last night and she wanted some for lunch. Easy enough.

Lunch Blox by Rubbermaid {What's in our Lunch Box?}

I stumbled across the Lunch Blox lunch system while strolling in Target.  I was pretty excited to see that it had little containers that clipped to other containers and a ice block!  I hadn't noticed at the time that there was a lunch box cooler that you could also buy separately that was made for the stackable blox set.  Pretty neat idea!

We have had one for weeks and I really love it.  

The features that I love:

~The containers click together on top of each other.

~The ice block clicks to the containers as well, keeping the cooling part right next to the food itself.

~Big enough to hold a balanced meal, each container fits something you'd need for a meal; fruit, veggies, grain.. or anything else you want to add.  

~You can get the Sandwich Kit or Salad Kit!  I love this, you can switch it up depending on your mood.  The Salad Kit is actually pretty awesome too!  {Deep container to fit lettuce and several smaller ones for the extras on the salad.}

~Easy to open and close!  My daughter is only 6 years old, so this is a must.  

~Pretty much can fit in any cooler.  I think the cooler it was made for is awesome, but my daughter really loves the one she picked out before we got this, so I altered it so it could fit inside nicely.

 My daughter has several different lunch box coolers some from years previous and product reviews.  I wanted to show that you can use it with whatever you have, I didn't add the other small one, I didn't need it this day. (but it would have fit, I've done it before) The ice block still click onto the bottom of the main container keeping the cooler nice and cool for lunch.  I asked my daughter if her lunch was still cold by lunch time, she said yes! 

I really like the Rubbermaid Lunch Blox System! Having Rubbermaid as the brand really helped me want to use this product, I can trust the name.  Easy to clean and use, and the quality is nice and sturdy.  Exactly what I need for 3 kids. 

BUY IT!!  You can find this a number of places including online!  I found these at Target for $10.49, but was on sale for $9.50... and there is a coupon available online for $1.50 off making this $8.

Cooking with Trader Joe's Cookbook: Easy Lunch Boxes version

I am a huge Trader Joe's fan! I love it so much that I drive 30 minutes to even get to one! I was extremely excited when I saw a new Cooking with Trader Joe's cookbook, this time with Easy Lunch Boxes.  I own the Easy Lunch Boxes system and I love them!  I use them quite often, so when I saw on Kelly Lester's blog months ago that there was going to be a new Cooking with Trader Joe's cookbook for lunches I knew I had to have it!

There are some great features about this book.  First, the lunches are easy to make! Second, the recipes look delicious, nutritious, and fun! They also tell you if the meal is vegan, vegetarian, and gluten-free.    Third, each recipe has a gorgeous picture to go with it!  This is such a huge thing for me.  I can do things without pictures, and yet I really love being able to see the finished product or ideas on how to put it all together.  Lastly, they are made with Trader Joe's food! Which means, food with no icky additives; like hydrogenated oils or high fructose corn syrup among others.  They also have items for all kinds of people; vegans, vegetarians, gluten-free and I am sure even more.

But all the recipes look amazing!

Oddly my daughter loves prunes {I love prunes too!} so I added one.  Did you know that a prune has more potassium in it than a banana, high in fiber AND high antioxidants! Prunes are awesome.  Just don't eat too many. LOL

This year she tells me that you can have a snack for recess.. Uh, I hope she didn't know this last year and just didn't tell me, I would have added a snack for recess.  I try to give her enough food to last the whole day, snacks and lunch.  Most of the time she brings some of it home. As long as she didn't go hungry I'm okay with that.
