I am trying to think about more healthy homemade snacks for kids after school. My kids are super hungry after school. I usually give them fruit and veggie with something else. But lately they have wanted a little something else. So this is my version of energy balls.
These are so easy to make and are packed with nutrition!
Natural Peanut Butter, Wheat Bran, Flaxseed Meal, Shredded Unsweetened Coconut, Oats, Honey (I recommend a raw local version) Chocolate Chips (a dark chocolate is best, like semi-sweets, bittersweets or even the cacao version with 70%)
1 Cup Oats (I used quick oats)
1/2 Cup Unsweetened Coconut
1/2 Cup Chocolate Chips
1/4 Cup Flaxseed Meal
1/4 Cup Wheat Bran
1/2 Cup Peanut Butter (heaping)
1/3 Cup Honey
Mix all together until it's fully combined. Form into balls, about Tablespoon size or so. Keep refridgerated, (or even frozen). Best served cold.
They are super yummy... very peanut buttery! (of course you could try another nut butter if you want)
